Cooking at home is a great way to make healthy food choices, including lean protein sources and a variety of colorful vegetables. Here are three options to try tonight – the choice is up to you.
Meal Idea #1: Southern Omelet
Who says eggs are only breakfast food? This first easy dinner recipe really brings the southern flavor and only needs one pan.
Ingredients:
- 3 Large Eggs
- 1 Tablespoon Diced Onion
- 1 Tablespoon Diced Green Pepper
- 2 Tablespoons Chopped Ham, Cooked
- 2 Tablespoons Pimiento Cheese
- 2 Strips Bacon, Cooked and Crumbled
Cooking Tip: Before adding the eggs to the pan, whisk them thoroughly. Whisking incorporates air into the mixture, making the eggs light and fluffy.
Instructions:
Spray sauté pan with cooking spray and add onion, pepper and ham. Sauté for about one minute, then add eggs and bacon and stir to form an omelet. Spread pimiento cheese evenly across the top and then fold in half. Slide onto a warmed plate and enjoy.
Meal Idea #2: Cabbage Salad
Looking for a fresh and tasty side dish? This cabbage salad brings color and crunch to the table and is proof that you don’t need a big kitchen or fancy equipment to create something delicious.
- 1 Small Head of Green Cabbage
- 2 Tablespoons Yellow Cabbage
- 2 Tablespoons Chopped Parsley
- 1 Tablespoon Honey
- 1 Small Diced Onion, Sliced Thin
- 2 Tablespoons Olive Oil
- 1 Tablespoon Dijon Mustard
- 1 Teaspoon Garlic Powder
Cooking Tip: Many easy meal ideas involve fresh fruits and veggies. Always wash your produce before cooking. To wash the cabbage, first remove the outer leaves, which may be wilted. Cut the cabbage into smaller wedges and rinse them underneath cold running water to remove dirt. Then pat the leaves dry with a clean towel.
Instructions:
Whisk all dressing ingredients together in a large bowl, adding salt and pepper to taste. Add cabbage and onions and toss until well-coated. Can be served at room temperature or refrigerated up to one hour before serving.
Meal Idea #3: Plum Chicken Breasts
Ready for a chicken dish with out-of-this-world flavor? This easy dinner recipe for plum chicken breasts is sure to be a crowd-pleaser.
Ingredients:
- 3 Tablespoons Vegetable Oil
- 2 Tablespoons Cornstarch
- ½ Cup All-Purpose Flour
- ½ Teaspoon Salt
- ½ Teaspoon Pepper
- 3 Plums, Sliced
- 2 Cloves Garlic
- 2 Tablespoons Tomato Paste
- 3 Tablespoons Light Brown Sugar
- ¾ Cup Pineapple Juice
- 3 Chicken Breasts, Cut into One-Inch Chunks
- 1 Medium Egg
- 2 Red Bell Peppers, Sliced
- 1 Tablespoon Rice (Or White Wine) Vinegar
- 2 Tablespoons Soy Sauce
Cooking Tip: Use a meat thermometer to ensure your chicken has been cooked to the correct temperature before eating. Chicken must be cooked to an internal temperature of 165 degrees Fahrenheit.
Instructions:
Place the chicken in a bowl and sprinkle on the cornstarch. Mix together with a fork or your hands until the chicken is coated. Break the egg into the bowl and use a fork to mix everything together thoroughly. Next, sprinkle on the flour, followed by salt, pepper, garlic salt and paprika. Mix everything together with your hands. The chicken should be well-coated but will also be sticky.
Add chicken to the pan where you heated the oil and cook on a high heat for six to seven minutes, turning during cooking, until well-browned. Once golden brown, add plum slices, pepper and garlic. Cook with the chicken for two minutes, stirring often, until the plumbs start to soften. Add all of the sauce ingredients, stir and bubble on a high heat until the sauce reduces, about two to three minutes. Serve over rice.
